Flax Egg: A Simple Binder
A ground flaxseed and water gel that binds pancakes, cookies and quick breads in about ten minutes.
The ratio and the grind
Mix one tablespoon of finely ground flaxseed with three tablespoons of water for each egg you are replacing. Whole seeds will not gel, so grind them fresh or buy them already ground.
Stir once and leave the bowl for ten minutes. The mixture thickens into a gel that behaves like a lightly beaten egg when it is folded into a batter.
Where it works and where it does not
Flax egg is at its best in cookies, pancakes, waffles and quick breads, where binding is the main job. It adds a faint nutty flavour that disappears in spiced or chocolate batters.
It does not whip, it does not set a custard, and it will not give a cake the lift that eggs provide. If a recipe depends on volume, look for one written around a different structure instead.
