Vegan Cooking for Beginners
A starting point for cooking vegan food at home, from a pantry you can repeat to your first three reliable meals.
Build a pantry you can cook from without thinking
Keep five things on hand and most weeknight meals become a variation rather than a project: a grain, a bean or lentil, a fat, an acid, and something savoury such as tamari, miso or a stock cube.
Buy the smallest useful amount of anything unfamiliar. A recipe that calls for one spoon of a paste you will never use again is a cost, not a lesson.
Cook three meals until they are boring
Pick one bean dish, one pasta or noodle dish and one tray bake, and cook each of them twice in the first month. Repetition is what turns a list of ingredients into timing you can feel.
Only then start changing one variable at a time: swap the bean, change the acid, add heat. Changing everything at once makes it impossible to learn why a dish worked.
Use the filters instead of guessing
Every recipe on this site carries dietary tags across seven dimensions, and the filters read those tags rather than the ingredient list. If you avoid dairy, open the dairy-free hub instead of searching for the word cheese.
Tags describe what the editors found in the listed ingredients. They are a starting point for your own reading of the label, not a substitute for it.
