Vegan Egg Substitutes

Which plant binders work for pancakes, cakes, cookies and brownies, how much to use, and where they fall short.

Pick a binder by what the egg was doing

An egg can bind, add moisture, add structure or help a batter rise, and no single substitute does all four. Decide which job matters in the recipe before you choose a replacement.

Ground flaxseed or chia mixed with water is the default binder for cookies, pancakes and quick breads. Mashed banana or apple sauce adds moisture but also sweetness, which is why they suit muffins more than bread.

Ratios that hold up in a batter

One tablespoon of ground flaxseed plus three tablespoons of water replaces one egg as a binder. Let it sit for ten minutes until it forms a gel, then whisk it into the wet ingredients before the flour goes in.

For cakes that need lift as well as binding, pair the binder with baking powder and a little acid such as vinegar or lemon juice. The bubbles come from the reaction, not from the substitute.

Where a substitute changes the result

Meringue, sponge and custard depend on egg proteins for their structure, and no plant binder reproduces that. Recipes built around those techniques need a different formula rather than a swap.

Start with a recipe that was written to be egg-free. Retrofitting a substitute into a recipe that leans on eggs usually produces a denser result, and it is hard to tell which ingredient caused it. Not a medical or allergen guarantee.
